What I Eat in a Lazy Day

Breakfast: Cereal with soya/almond milk
Cereal is life and I have survived off this breakfast for my entire life. Being vegan does not mean I'm suddenly going to eat chia pots and overnight superfood oats or some faff. Nope, just cereal.

Lunch: Bagel & Hummus
Can you tell I'm not one for faffing around? Bagel's are delicious, especially the sesame seed ones. I have no idea how something so insignificant improves something so much, but it does, and I love it. I like to add whatever easy salad bits I have in the fridge onto this to make it slightly more exciting

Dinner: Mac & Cheese
This is a wonderful recipe from Eat Smart and was my first introduction to nutritional yeast. Turns out, it's great! I was worried it would taste too artificial and not cheesy at all, but actually this recipe makes a great easy creamy meal. Perfect for a lazy comfort food kind of day.

I'm beginning to think that you actually don't need to miss out at all being vegan, you just have to look in the right places! Have you found any great vegan meal alternatives? I'd love to know!
